A. Overall we highly recommend Booking.com. Great prices and easy booking terms mean you can sometimes book without paying anything until arrival. Which in current times is the safest way.
As for where as a location, it obviously depends on the city. We give a general outline on our destination pages for Budapest, Prague and Athens.
We do suggest you avoid Air BnB. We have experienced groups finding themselves without accommodation as they did not read the small print. A majority of Air BnB do not accept stag groups! So you arrive, they see you are a group of lads, and you are homeless! Stick to Booking.com as we recommend above.
A. We ask you to select the date you want to do the activity but not to set a time. There is a couple of reasons for this. First, we have a lot of experience on setting the best time for each activity and will do this for you. Secondly, in high season, March to end of July, popular activities in particular get booked fast, so often we have to take the time slots available.
If you want a specific time, say in the notes when booking and we do our best. You are more likely to get a requested time by booking earlier.
